Father’s Day, Coconut cake, and sweetened condensed milk

Don’t waste your money on sweetened condensed milk.  You can easily make your own.  I just made some for a coconut cake that I am making for hubby for Father’s Day!

Easy Coconut Cream Cake (very good and very moist!)

  • 1 box white cake mix (I used coconut oil when adding oil to the mix)
  • 1 can sweetened cond. Milk
  • 1 can cream of coconut
  • 1 bag coconut flakes ( I did not use whole bag of coconut.  Use at your own discretion.)
  • 1 large container of cool whip
  • (opt.) conf. sugar

-Bake cake, adding ½ bag of coconut flakes. Let cool completely.

-Punch holes with handle of wooden spoon along cake about ½ inch apart

-Mix can of cream of coconut and sweetened condensed milk and pour evenly over the top of the cake.

-In same bowl mix entire container of cool whip and rest of coconut flakes. Can also add in confectioners sugar if desired. (better this way in my opinion, it makes a much yummier frosting.)

-Spread evenly over cake. Refrigerate immediately.

How to make sweetened condensed milk:

  • 1 c. instant nonfat dry milk
  • 2/3 c. sugar
  • 1/3 c. boiling water
  • 3 tbsp. butter

Beat all ingredients together. Process in blender until smooth and store in refrigerator. Makes 1 1/4 cups or the equivalent of 1 can.

Another tip:

  • Store your nonfat dry milk in the freezer.  If you don’t use it that often, like myself, it will keep much longer this way.

Wednesday’s Wisdom

1 Kings 8:61  Let your heart therefore be perfect with the LORD our God, to walk in his statutes, and to keep his commandments, as at this day. How much do we give? Psalms 96:8-9 “Give unto the LORD the glory due unto his name:” (Give Praise and worship) “bring an offering, and come into his courts.” (Give personal wealth) “O worship the LORD in the beauty of holiness: fear before him, all the earth.” (Give practical witness) “ God wants our praise.  The world needs our practical witness of a holy life.  and we need to give our personal wealth.  God does not need our gifts-but we need to give.  The greatest gift we can give is to give our lives to His service. ~The above is from My Morning Manna, vol. 3, p. 226, by Ed Nelson

Did You Know?

I like to use the site Moments with the Book .   It is a great site for ordering tracts and for finding other wonderful information.  You may notice that one one of my pages (at the bottom) I have a tract that displays from their site.  Below I found some interesting facts from a back issue of Moments for You .  This is a free booklet, that can be read on line or you can order it by mail.  Did You Know That...? In just one second, the sun releases more energy than mankind has produced since the creation, including all the engines, power plants, and weapons ever constructed. The star Betelgeuse is one million times larger than our sun and gives off 120,000 times as much light energy. No two stars are alike. Each star bears a unique "fingerprint" or spectrum in its light pattern. If the stars could be divided up among the world's population of six billion, each person on earth would receive 11Ž2 trillion stars! The most familiar star is the North Star...
